Making Jamie Oliver’s Ice Cream

It’s summertime and what could be better than some delicious homemade ice cream!

When Guy asked me to research a good recipe for an easy berry ice cream I was excited, but many of the recipes on the internet are not that easy! However, I found this video of Jamie Oliver’s easy frozen yogurt (or FroYo as it’s called in the States).

I tried it out yesterday with what I had in the house:

  • 300 g frozen blueberries and raspberries
  • 300 g strawberry coconut milk yogurt (Dairy free)
  • Sprig of fresh basil
  • Squeeze agave or honey

I whizzed it all in the food processor and the first taste was delicious! It can be a last-minute soft serve dessert or frozen for later. If you freeze it be sure to let it sit out for a few minutes before serving, as it freezes very hard!

Now I am excited to try some other combinations, Mango with vanilla yogurt and mint… Mmmm!
